"Iced coffee" generally refers to traditional hot-brewed coffee that is chilled by being poured over ice. The issue with this method is that the change in temperature can give your coffee a bitter and acidic taste. The beauty of cold-brewing is that it uses time instead of heat, letting the coffee grounds steep in cold water for hours, to gently extract all of the flavours and aromas from the coffee, with absolutely none of the bitterness or acidity.
You'll notice that the texture of cold brew coffee is silky smooth and the flavour profile much more rich and complex than hot-brewed coffee that has been chilled by adding ice.
