Pre-infusion is the process of gently saturating the coffee inside the pod before applying the high pressure needed for extraction. 

This ensures that water evenly penetrates the grounds, so that the coffee has the same amount of water flowing through it once extraction begins. The result is a balanced cup of coffee packed with rich flavours.
